Last week I made the decision to go Vegan. There are many reasons behind this, but the biggest is the fact that I have just not felt like myself lately. No energy, headaches – just not right. I have been to the doctor and they keep coming back with perfect blood results, so clearly there is nothing wrong with me. After nearly 2 months of this I decided to take things into my own hands. One of my friends had recommended a vegan cookbook – a while back – that I absolutely loved. So, why not take it to the extreme?! (Cookbook is called Appetite for Reduction by Moskowitz)
My biggest hurdle thus far is creating a good meal plan for myself. I am one that LOVES cheese and it has always been my go-to snack – cheese sticks, cottage cheese, whatever. With the amount of protein and fat I always felt satisfied and didn’t have to worry about low blood sugar. Second biggest concern was coffee; I am beyond picky with my coffee and after trying Silk French Vanilla creamer knew this was going to be a struggle.
Thanks to good friends they found a recipe for me called Vegan Mocha “Frappuccino”. This recipe was a bit rich for my taste but was definitely close. I have since found/created what I think is the perfect Vegan Mocha coffee for my morning wake up call.
1c brewed coffee
3/4c coconut milk (unsweetened)
1.5T cocoa powder
1T agave nectar (light)
1 frozen banana
I simply throw everything into my Ninja and blend away. It is seriously DELICIOUS!
